strawberry date energy balls

vegan, vegetarian, gluten-free, dairy-free | makes about 24 balls

strawberry date energy balls

ingredients:

2 cups raw cashews

10-12 medjool dates (pitted)

2 tsp maple syrup

1 dash vanilla extract

1/2 cup freeze-dried strawberries

1/2 cup shredded coconut

1/4 tsp salt

directions:

  1. roughly chop up your dates and let soak in hot water for 1 hour. drain and pat dry.

  2. in a blended or food processor, blend the cashews first so there are no big chunks (they are more evenly blended when done in a dry blender first). set aside. remember, raw cashews only!

  3. blend the freeze-dried strawberries into a powder. again, do this in your dry blender. set aside.

  4. alright time to combine everything – along with your cashews, add the dates, maple syrup, vanilla, and salt. blend until it sticks together.

  5. toss in the strawberries and blend again. you’ll need to stop and scrape the sides – but you can do hard things.

  6. scoop into 24 portions, roll into balls, and coat them in shredded coconut.

  7. pop them in the fridge for at least 30 minutes – enjoy!

*store in an airtight container in the fridge for up to a week*

optional additions:

  • add in 3 tbsp of hemp seeds for added fiber and omega3s.

  • honestly any seed you’d like, but know it will affect the texture.

  • along with the shredded coconut you can save some powdered strawberries to sprinkle on the outside too! bomb.
