vegan, vegetarian, gluten-free, dairy-free | makes about 24 balls

pecan pie energy balls

ingredients:

1 cup raw cashews

1 cup raw pecans

2 cups hot coffee

10-12 medjool dates (pitted)

2 tsp maple syrup

1 dash vanilla extract

1/4 tsp salt

24 pecan halves

directions:

  1. roughly chop up your dates and let soak in hot coffee water for 1 hour. this makes the flavor AMAZING. don’t skip this step! drain and pat dry.

  2. in a blender or food processor, blend the cashews and pecans first so there are no big chunks (they are more evenly blended when done in a dry blender first). remember, raw nuts only!

  3. combine everything – along with your nuts, add the coffee soaked dates, maple syrup, vanilla, and salt. blend until it all sticks together.

  4. scoop into 24 portions, roll into balls, and press 1 pecan half into the top of each one. cute.

  5. pop them in the fridge for at least 30 minutes – enjoy!

*store in an airtight container in the fridge for up to a week*

optional additions:

  • add in 3 tbsp of hemp seeds for added fiber and omega3s.

  • honestly any seed you’d like, but know it will affect the texture.
