coconut chia seed pudding

vegetarian, vegan, gluten free, dairy free | makes 6 servings

coconut chia seed pudding

ingredients:

1 can light coconut milk (unsweetened)

1/3 cup coconut yogurt (unsweetened, ideally)

1/2 cup chia seeds

2 tbsp maple syrup

1/2 tsp vanilla extract

1 pinch salt

directions:

  1. whisk together everything except the chia seeds super well.

  2. slowly begin adding the chia seeds to the liquid and continue whisking – this makes for the best texture because if not, the chia seeds like to clump together.

  3. let sit together covered or in separate containers in the fridge for at least 1 hour.

optional additions (that change the dietary elements):

  1. love topping this with ganola for added texture.

  2. LOVE meal prepping this then topping with some frozen mango. in the morning it will be thawed and amazing, and a nutritious wanna-be mango sticky rice. ;)
