coconut chia seed pudding
vegetarian, vegan, gluten free, dairy free | makes 6 servings
coconut chia seed pudding
ingredients:
1 can light coconut milk (unsweetened)
1/3 cup coconut yogurt (unsweetened, ideally)
1/2 cup chia seeds
2 tbsp maple syrup
1/2 tsp vanilla extract
1 pinch salt
directions:
whisk together everything except the chia seeds super well.
slowly begin adding the chia seeds to the liquid and continue whisking – this makes for the best texture because if not, the chia seeds like to clump together.
let sit together covered or in separate containers in the fridge for at least 1 hour.
optional additions (that change the dietary elements):
love topping this with ganola for added texture.
LOVE meal prepping this then topping with some frozen mango. in the morning it will be thawed and amazing, and a nutritious wanna-be mango sticky rice. ;)
